Yoichi Aromatic Yeast 2022 Single Malt Japanese Whisky

The Yoichi Aromatic Yeast is a limited-edition single malt from Nikka’s "Discovery" series, designed to showcase the profound impact of specialised fermentation techniques on the distillery's core character. Bottled at 48% ABV, this expression departs from the traditional heavy, coal-fired intensity of Yoichi by utilising unique yeast strains that introduce bright, fruit-forward aromatics reminiscent of Ginjo sake, resulting in a complex, harmonious balance of signature earthy peat, sea spray, and vibrant notes of melon, white grape, and plum.

NOSE Herbaceous and empyreumatic (smoky/sleet) peat, followed by apple, pear, melon, floral notes (lily, carnation), and eventually creamy or medicinal hints.

PALATE Firm and lively, featuring a mix of sea spray, earthy peat, and fruity nuances like plum and greengage.

FINISH Long and crisp, with lingering notes of white grapes, plum, and a delicate touch of liquorice.
