Shindo Experimental 02 Single Malt Japanese Whisky

The Shindo distillery was established in 2021 by Shinozaki, a long-standing sake brewery, with the concept of "THE QUEST FOR THE ORIGINAL". The distillery focuses on innovative whisky creation, using proprietary yeast strains derived from its sake-brewing background and experimenting with various barrel types and aging processes to achieve unique, multilayered flavours.

While EX01 expressed the charm of the distillery’s new make through a deliberately simple cask composition, EX02 builds upon that foundation. By vatting more mature spirits, it brings greater breadth and depth to the qualities derived from the new make. The composition consists entirely of non-peated spirits: 89% bourbon casks, 6% Oloroso sherry casks, and 5% brandy casks. Bright estery aromas rise elegantly, followed by gently toasted dried-fruit nuances. Alongside these, the lactone-derived milky and fatty sweetness inherent to the new make reveals subtle toffee notes. The contours of the aroma and flavor have become more defined, and the expression richer in character.
