Vieux Sajous 5 Year Old 2019 Haitian Rum

Founded in 2004, the Chelo distillery carries on a family tradition that spans fifty years. Located in northern Haiti on a wind-swept plateau, it is surrounded by a 30-hectare plantation where Michel Sajous cultivates the Cristalline cane variety.

This version is the result of natural fermentation using indigenous yeasts, lasting between five and eight days, and is distilled over an open flame in a pot still. It is made from a blend of casks that previously held Hampden, Mount Gay, Bielle, and Caroni rums, as well as whisky from the Benriach distillery and finally bourbon.

Aged in Haiti in the cellars of the Port-au-Prince Distillery, this expression evokes an aromatic and flavor profile of a balanced rum with pronounced empyreumatic notes that evolve into honeyed tones.
