Glengoyne

Glengoyne distillery is a whisky distillery continuously in operation since its founding in 1833 at Dumgoyne, north of Glasgow, Scotland. Located upon the Highland Line, the division between the Highlands and Lowlands of Scotland, Glengoyne is unique in producing Highland (where its pot stills are located) single malt whisky matured in the Lowlands (where its casks are left to mature). Glengoyne also has the slowest distillation process at one-third of the normal rate.  Glengoyne believes that slowly distilling the spirit allows more contact with the copper stills, removing unwanted sulphur which can result in bitterness and encouraging the formation of esters creating Glengoyne's distinctive apple fruitiness. The increased copper interaction also helps draw more flavour from the slowly handcrafted Spanish Sherry oak casks during maturation.
